Chicken Curry Pita Pockets


I was a little skeptical about making these pita pockets with curry in them. I love curry, but wasn't sure this combination was going to work.  The curry combined with the sweetness of the grapes were perfect!  I was so excited at how these turned out.  This is great to prepare ahead of time, and made for such an easy and delicious meal!  LOVED THEM!  Give it a try!

CHICKEN CURRY PITA POCKETS

3/4 cup mayonaise
1 tsp. Soy Sauce
1 tsp. lemon juice
1/2 tsp. curry powder
1 small onion finely chopped
2 1/2 cups diced chicken (I used a Rotiserrie chicken)
1 1/2 cup green seedless grapes halved
3/4 cup chopped celery
1/2 cup sliced almonds
10 pita pocket halves
10 lettuce leaves

Combine the mayonaise, soy sauce, lemon juice, curry powder and onions. Mix well.
Add chicken, celery and grapes. Refrigerate till ready to serve.
Add almonds just  before serving.
Cut your pita pockets in half, and add a slice of lettuce inside.
Fill each pocket with 1/2 cup of chicken salad.
Enjoy!
