
Once again as I opened my pantry, there before me were the VERY ripe bananas that seemed to have slipped by my husband. He loves bananas and usually likes them a little more green, so by the time I get them to the ripeness I would like, they are gone! We'll, this gives the perfect opportunity to now use them for cooking, since that is all they are good for at this point. Next to the bananas in the pantry was a box of yellow cake mix! Hmmm, that was the answer to what to do with the bananas. This cake turned out so delicious, and topping it off with the cinnamon glaze just put it over the top for me and yes for my husband!
CINNAMON GLAZED BANANA BUNDT CAKE
1/2 pkg. (1.5 oz.) instant banana cream pudding mix
1 cup water
1/3 cup oil
3 large eggs
2 medium ripe bananas
Glaze:
1 Tbsp. butter
2 Tbsp. milk
1/3 cup light brown sugar
1/2 cup powdered sugar
1/2 tsp. cinnamon
Preheat oven to 350 degrees.
Grease and flour a 10 inch bunct pan.
In a bowl combine cake mix, pudding mix, water, oil and eggs.
Mix for about one minute.
Add mashed bananas, and mix for another minute.
Pour into the greased and floured bundt pan and bake for 43-45 minutes,
or until a toothpick comes out clean.
Let cool.
While cake is cooling, mix your glaze.
Combine butter and milk and microwave for about 20-30 seconds.
Add sugars and cinnamon and stir till you have a nice consistency for your glaze.
Let cool slightly before pouring over your cooled bundt cake.

I have done something similar also adding coconut and pineapple. Very moist. I have made my own cake mix the last couple of times I used a recipe that called for cake mix.
